For seasoning:
20 ml white wine, 1 tbsp, cider vinegar, some capers, salt and olive oil
Instructions

  1. Chop the Garlic, and remove seeds from the Chilli.
  2. Wash and drain the Capers, if you do not want them to be too salty.
  3. Chop the Vegetables, except the Tomatoes, which should be cut in half.
  4. Fry the Garlic over low heat for about 2 minutes, until golden.
  5. Place the chopped Vegetables on the grill, and cook covered over a medium heat for 15 minutes, stirring occasionally.
  6. After 15 minutes, add the Tomatoes and season. Then roast for 12 minutes.
  7. Put the Olives, Basil leaves, and a few drops of Olive Oil.
  8. Cook for a further 3 minutes.
  9. Basil can be added at the end, and place over the Vegetables if you prefe
