Pork Tenderloin with Figs and Cherry Sauce

1 lb (500g)
Pork Tenderloin

Large sweet potato

Clove garlic, minced

1 tbsp
Extra Virgin Olive Oil

1/2 cup
Fresh and dry black mission figs, cut into small pieces

8 oz (200g)
Frozen black cherry

1/4 cup
Port wine

1/2 cup
Chicken broth

1/8 tsp
Dry thyme

Pepper and salt

  1. Rub pork with garlic, olive oil, salt and pepper.
  2. Heat the grill over medium heat for 3 minutes, place the pork and cook all sides until golden blown for about 7 minutes. Take out the pork and keep it on a plate.
  3. Add figs, black cherry, port wine, chicken broth, dry thyme on the grill, then put the pork back into the grill.
  4. Put sliced sweet potatoes around the pork and put lid on, cook for 15 minutes till the pork is cooked through and the potatoes are soft enough.
  5. Take the pork out and leave on the plate for 10 minutes.
  6. Slice the pork and pour the figs and cherry sauce over it.
  7. Serve with the sweet potatoes.
